Fresh Spinach with Garlic Sandwich and The Health Benefits



Served raw, spinach is a good source of vitamin C, another powerful antioxidant.

Like other dark greens, spinach is an excellent source of beta-carotene, a powerful disease-fighting  antioxident  that's been shown, among other things, to reduce the risk of developing cataracts. It fights heart disease and cancer as well.
As a dark, leafy green, spinach possesses several important phytochemicals, including lutein, which helps prevent age-related macular degeneration. Spinach also contains lipoic acid, which helps antioxidant  vitamin C
and E
 regenerate. Because of its role in energy production, lipoic acid is being investigated for regulating blood sugar levels.
Spinach is a good source of Vitamin K, which aids in the formation of the blood substance required for clotting of blood.

Spinach is also helpful in the following cases:  Anemia, Tumors, Constipation, Insomnia, Obesity, Neuritis (inflammation of nerves), Nerve exhaustion, High blood pressure, Bronchitis, Colon cancer, Prostrate Cancer, Breast cancer, Osteoporosis, Dyspepsia (chronic indigestion), Also helps ailment of the kidneys, bladder and liver.

Fresh Spinach with Garlic Sandwich
1 bag fresh spinach
red pepper flakes to taste
3 cloves of minced garlic
extra virgin olive oil
Sliced fresh Italian Bread

Rinse spinach. In a large pan, heat 3 tablespoons of oil, then add garlic and spinach. Saute till limp but still colorful. Spoon on to sliced crusty Italian bread.
