Roasted Healthier Brussel Sprouts Recipe



You may remember the article on Brussel Sprouts and why they are good for you?  Here is an easy way to enjoy these and not lose any of the nutrients and vitamin content. Roasting is a great way to prepare these, they are easy and delicious!

1 1/2 pounds of brussel sprouts
kosher salt to taste
black pepper to taste
3 tablespoons olive oil
dash cayenne pepper
1 teaspoon minced fresh garlic
Fresh squeezed lemon
oregano

Clean and remove any brown spots on the brussel sprouts. Wash and dry them. In a bowl place oil, spices, garlic mix together, toss in the brussel sprouts. On a parchment lined cookie sheet bake them around 45 minutes. Roll them around to evenly brown. Test one with a fork if it goes through them easily they're done.  While warm squeeze some fresh lemon and sprinkle with some dried oregano.

A healthy and great vegetable that is low in saturated fat, and very low in cholesterol. It is also a good source of Thiamin, Riboflavin, Iron, Magnesium, Phosphorus and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Folate, Potassium and Manganese.

  1. I never liked brussels sprouts until I roasted them! Roasted veggies are the way to go in my book! Great idea.

  2. I will have to give this method a try. Brussel Sprouts are one of the few vegetables that I am not fond of. I always figured there had to be away to make them that would make them palatable.
