Healthy Herb Roasted Vegetable Recipe

In the summer you can enjoy fresh garden produce. Winter is a little harder to find them in abundance.
Even frozen vegetables can be used in this tasty healthy dish.

 
2 plum tomatoes sliced or more to the size of your family
2 sliced zucchini with skin left on
2 sliced bell peppers
2 potatoes thin sliced
1/2 cup celery chopped
1 teaspoon each Italian seasoning, oregano, basil, garlic powder
1/4 cup grated parmesan cheese
olive oil
parchment paper
cookie sheet
In a large bow place all the vegetables, drizzle with olive oil then add the seasonings. Mix well. Spread out in a single layer on the parchment lined cookie sheet. Bake at 400 degree hot oven until vegetables are soft, around 45 minutes.

Quick Multi Grain Pizza Dough Recipe

Here's a healthier version of pizza dough and quick and easy to make. Taste great!

Quick Multi Grain Pizza Dough Recipe:

3 cups water
1 cup whole wheat flour
1 cup finely ground yellow semolina
1 cup rolled oats
3 1/2 cups bread flour
2 tablespoons salt
two packets dry yeast

Place yeast in a heavy duty electric mixer with water stir to dissolve then mix everything in together at once, mix with dough hook until all dry ingredients are moistened equally and well blended together. Place in large covered plastic container. You can use immediately or place in regfrigerator for up to 14 days.
For Pizza:

Spread dough out on a greased or parchment lined pizza pan when ready. Let rise for 30 minutes in a warm area then bake on 400 degrees until bottom is starting to brown.
I like to cook the crust first. Then take it out and brush with olive oil,  put anything you like on it below, adding shredded low fat mozzarella cheese on top, garlic powder and dried oregano and fresh basil leaves chopped after it comes out of the oven.  Rebake it at 400 degrees until the cheese is melted and browned.

Chopped tomatoes
Chopped basil leaves
Fresh spinach leaves
Cooked broccoli
Cooked cauliflower
Fresh mushroom slices
Black olives sliced
Eggplant sliced thin
