Organic Herb Roasted Chicken Recipe

Organic chicken, no preservatives and all garden fresh herbs

1 organic chicken cleaned and insides removed
2 sprigs fresh rosemary
2 fresh basil leaves
2 tablespoons chopped fresh parsley
4 whole cloves of garlic chopped in half
1/4 cup olive oil
1/4 cup water
1 fresh lemon
In a large roasting pan place 2 tablespoon of oil in the pan, place chicken in the pan. Add water, to the bottom. Make small slits into the chicken in random area's and stuff with garlic. Stuff the bird's cavity with the fresh lemon. Squirt some juice in the water.
Sprinkle the top of the chicken with salt and pepper, cayenne if you like heat then all the fresh herbs. Drizzle with olive oil.
Bake in a low heated oven at 325 degrees until the chickens juices run clear around 1 1/2 to 2 hours depending on the size. Around 1/2 hour per pound.
If the bird starts to dry out add more water to the bottom.
