Slim Down Recipe Diary and Huevos Rancheros Recipe

Here is recipe number 2. Easy to make and can be for breakfast, lunch or dinner. This dish has 270 calories without using or buying reduced fat products, it will be even less calories if you substitute them. You can buy low carb, low salt tortillas or even make you own. Best of all you control what you like in this one and with full fat content you're still low in calories content.  

Huevos Rancheros Recipe

4 large eggs
4 corn tortillas 6"diameter
1 can refried beans ( I use fat free) but the calories above are using regular
1/2 cup salsa
1/4 cup shredded thin cheddar cheese

Preheat broiler. Coat non stick pan. In a skillet boil 1 1/2 cups water. When boiling put on low. Add the eggs into the water cook 3 to 5 minutes just until whites are set.
In the mean time place tortilla on the baking sheet, heat under broiler 1 minute. Flip spread the untoasted side with beans. Cook under broiler 1 minutes. Add the egg, 2 tablespoons salsa and cheese. Cook 30 seconds more under the broiler to melt cheese.
