Cranberry Apple Sauce Recipe


Another one of those healthy secrets in reducing high cholesterol and adding to your HDL are cranberries. Drinking a glass of pure juice a day can provide amazing results studies have shown.  HDL increased your good cholesterol and provides protection to your heart health. LDL lowered overall scores on the bad cholestral.  Everyone already knows cramberries are known to keep the bad bacteria out of the urinary track. Overall a very healthy addition to your diet. 

2 cups apples peeled cored and cubed
1 12 oz bag fresh cranberries
1 1/4 cup sugar
1/2 teaspoon cinnamon
pinch of allspice
2 teaspoons orange zest
1 tablespoon canola oil
1/2 cup water
1/4 Amaretto liqueur

Heat oil in a saucepan over medium heat. Add the sugar, cinnamon, allspice, water, Amaretto, apples and cranberries.  Bring to a boil, reduce heat and simmer around 5 to 7 minutes or until the cranberries pop open. Remove from heat stir in the orange rind. Serve chilled with chicken or turkey.

Breast Cancer Awareness Month


What more can we stress the importance of than foods than Prevent this horrible disease?  Many article have been written with recommendations on how to prevent and combat the possible onset of breast cancer. Studies have shown that woman who eat six or more bean based meals a week have a 34% lower rish of breast cancer than those who eat them once a month or less.

You can also enrich your diet by eating a liberal amount of berries. The are laced with compounds that block stem cells associated with breast cancer formations.  Fresh blueberries are the best bet in their studies, all you need is 1/2 cup a day for protection.

Green leafy vegetables are also among the studies of protection of breast cancer and those that are the highest in contributions are spinach, kale, broccoli, arugula and escarole.. they had a 40% reduced recurrence risk after five years.  In a recent study, more than 700 woman found that those who ate the most lycopene (cooked tomato products) had a 35% lower breast cancer risk than women who didn't eat tomatoes.

National Breast Cancer month is all about having a breast examination. Keep your self on a routine checkup every year. Early detection means early cure.


Make foods that are healthy and part of your every diet. Change your habits. Eat right.

Escarole and Beans
Escarole and Beans Recipe:
1- 8 oz can of chicken broth
1/4 cup extra virgin olive oil (first cold pressed)
2 large heads escarole
salt and pepper to taste
1/4 teaspoon of each oregano, basil, parsley, garlic powder
1/4 teaspoon crushed red pepper flakes
3 clove minced garlic
2 lbs of fresh cooked dried northern beans  or 2 (16 ounce) cans cannellini beans, drained
plenty of pecorino romano cheese
If using fresh beans reserve 1/2 of the bean water
3 sprigs fresh parsley, chopped,
pinch of cayenne pepper



Boil escarole seperately until tender about 35 minutes, drain.( Or take a shortcut if you work, do dried beans with water in one crock pot on high for 8 hours all day or overnight and escarole in the another crockpot filled with water and when you get home from work,  saute in oil and garlic, add broth, heat through add the seasonings and pour over hard crusty Italian bread.
