2 cups rolled oats
3 Tablespoons butter
1/4 cup brown sugar
2/3 cup honey
1 1/2 teaspoons vanilla extract
1/2 cup raisins, or dried cranberries
1 cup chocolate chips, divided
1 cup pumpkin seeds roasted or if no nut allergies your favorite nuts ( I used pecans)
1/4 teaspoon salt
Heat the oven to 350 degrees.
Line a brownie sized pan with parchment paper.
In a large bowl place, the pumpkin seeds with oats to combine then add a cookie sheet and roast for 15 minutes stirring occasionally
When toasted remove for the oven and place the mixture in a large bowl.
In a small saucepan add the butter, honey, brown sugar, vanilla, and salt bring to a boil on medium heat.
Cook for one minute.
Pour over oatmeal mixture and add raisins or cranberries and 1/2 cup of chocolate chips.
Just folding to combine.
Pour all that into the prepared baking dish.
Press down the granola mixture into the pan evenly using wax paper.
Add the remaining chocolate chips on top.
Bake for 25 to 30 minutes or until light golden brown.
Cool before cutting and store in an airtight container.
